When I was in college I had some pretty successful hawks and a very low budget. I ate rabbit in many forms; fried in butter with salt and pepper. Smothered with cream of mushroom soup . Sauteed with mushrooms and onions, and modified hasenpfeffer recipes. I started boiling several rabbits at a time and stripping off the meat then grinding it into "rabbit burger". I would use rabbit burger in spaghetti, tacos and on pizza. All these things still tasted like rabbit. My wife is still "sick of" rabbit 25 years later. She is still reluctant to eat rabbit.
What did pretty well kill the "rabbity" taste was making rabbit salad sandwiches using chilled rabbit burger, miracle whip mayonnaise, carrots, celery, and onions. Spread on toast or crackers.
Hey there Rylan welcome to NAFEX. Take a look around there is lots of good information on here.
Just a heads up before the forum police get ya. You need to go into user cp and add at least your first name to your signature line so that it shows up on all your posts. keeps things friendly being on a first name basis.
Rylan,
I will be watching EVERYTHING you put on here. Keep it within the parameters.
Don
Just about any recipe that you have that calls for chicken you can substitue rabbit.
thx Chad, your help is much appreciated. Hope your molt is going well :)
Guys
Quit confusing my boy. It's the price you pay for success having to eat all that rabbit. It's good for you quit complaining besides your mom helped with the eating.
Don
OK Don, I do enjoy the rabbits I catch. A few of the recipes are really good and some not so much. I'm sure i'll find more over time. My favorite recipe is shown below. It is AMAZING!!!
Ingredients:
1 rabbit
1/2 tsp ground black pepper
425 grams diced tomatoes
1 cup red wine
1 cup water
100 grams button mushrooms (sliced)
125 grams bacon (shortcut, sliced)
2 carrots (medium, chopped)
2 onion (medium, chopped)
2 stalks celery (chopped)
1 bay leaf
1 tsp oregano
1/4 cup flour
Directions:
1.) Grind pepper over the rabbit and place in the crock pot.
2.) Combine all other ingredients EXCEPT FLOUR in a large bowl, mix well and pour over the rabbit.
3.) Cover and cook on low for 6 hours for a small rabbit, or up to 8 hours for a large rabbit. Actually cook for half an hour less as below.
4.) Thirty minutes before ready blend flour with 1/2 cup of water until it is a smooth paste, add to the pot and stir well to thicken and continue cooking covered for a further 30 minutes.
5.) Give it a good stir and allow to rest 10-15 minutes before serving.
6.) At this point the rabbit should be so tender that you can tear pieces off with a fork to serve rather than cut. Just scoop it all out onto a plate.
7.) You'll end up with bones in the dish so eat much like you would a fish dish being careful for bones. Serve along with a nice crusty roll to soak up the juices.
