    Smile Hello

    Hello every one. I am an apprentice falconer from Colorado. I just finished out the season with 34 cottontails with my passage tercel redtail. Man am I getting tired of eating rabbit. Anyone have a good recipie?

    When I was in college I had some pretty successful hawks and a very low budget. I ate rabbit in many forms; fried in butter with salt and pepper. Smothered with cream of mushroom soup . Sauteed with mushrooms and onions, and modified hasenpfeffer recipes. I started boiling several rabbits at a time and stripping off the meat then grinding it into "rabbit burger". I would use rabbit burger in spaghetti, tacos and on pizza. All these things still tasted like rabbit. My wife is still "sick of" rabbit 25 years later. She is still reluctant to eat rabbit.

    What did pretty well kill the "rabbity" taste was making rabbit salad sandwiches using chilled rabbit burger, miracle whip mayonnaise, carrots, celery, and onions. Spread on toast or crackers.

    Hey there Rylan welcome to NAFEX. Take a look around there is lots of good information on here.

    Just about any recipe that you have that calls for chicken you can substitue rabbit.
